This position is responsible for providing technical assistance to the R&D manager with recipe creation, prototyping, shelf life recommendations, investigation, troubleshooting, and documentation. Support scaling up of the recipe to pilot plant and line trials and collaborate with CSI and brand team for consumer research preparation.
Main Responsibilities:
Develop a recipe following PDR aligned with the project team.
Select ingredients complying with regulations.
Complete prototyping and schedule stability sampling plan with sensory lead.
Plan scale-up trials and provide inputs to the project stakeholder and network.
Provide training to the operation and Quality team for the effective handover of the project and provide technical support during the commissioning of the recipe.
Prepare detailed documentation of procedures, parameters, ingredients, shelf life, and risks involved.
Verify regulatory status and ensure required approvals are in place.
Taste, observe, and smell ingredients and finished samples to ensure that characteristics of flavor, color, taste, etc. meet specifications, or to select samples with specific characteristics.
Assist with the standardized testing of new product prototypes to verify product reliability.
Generate spreadsheets and documents as needed for R&D documentation.
Develop flavor library for future application and manages the expiration of flavors and reordering.
Maintain an accurate inventory of all R&D product samples stored in freezers and cold storage areas.
Maintain R&D laboratory housekeeping standards in order to keep the workplace neat and tidy, implements and manage 5S in the R&D technical center.
Requirements
5 years of work experience, preferably in the food manufacturing sector.
